Thai Coconut Pineapple Curry Banana Bread

Please, for the love of Dog, make this for yourself. When I read about this on the blog of a gal in Bali I knew I had to make this. Sugar, butter and all (will try to make it a little healthier the neeeext time). The only change I did make was to swap out 1/2 cup of unbleached flour for whole wheat. I would have prefered to add nuts, but the Monster doesn't like pecans or walnuts...hmph. Maybe add 1/2 cup of either of those and it would be just right. You could always add unsweetened dessicated coconut too for a little extra texture. I found the powdered coconut milk/cream in the Asian foods aisle at Central Market.

Thai Coconut Pineapple Curry Banana Bread:

3 ripe bananas
1/2 cup melted butter
1/2 cup sugar (I used granulated evaporated cane juice)
1/2 cup brown sugar (organic)
1 egg, beaten
2 tbsp coconut cream powder (or unsweetened coconut...I might do both next time)
1 tbsp lime juice
3 tbsp mild curry powder
1/2 cup chopped pineapple (I used fresh, don't know if canned would be fine also)
1 tsp baking soda
1 1/2 cups flour (I used 1 cup of unbleached white and 1/2 cup of whole wheat pastry flour...thinking I'll try some whole spelt flour next time)
optional: chopped nuts...1/3-1/2 cup?

Preheat oven to 325F. Butter and flour a loaf pan.
In a large bowl mix the melted butter, mashed bananas and coconut cream powder with a spoon. Mix in sugars, egg, lime juice and curry powder. Add pineapple and mix. Mix in baking soda. Add the flour and mix. Pour into greased 4x8 (mine was 8.5) loaf pan. Bake for 1 hour (I baked mine for 1 hr 20 min). Cool on rack before removing from pan.

Finally got around to making this one. Couldn't find coconut milk powder so just adding a glug or two of coconut milk and bumped the flour up to 2 c. Used a combo of ww pastry flour and spelt flour and added pecans and coconut flakes. Turned out great!!

Great to hear Beth! That flour combo is exactly what I'd planned on trying next, so thanks for paving the way for me. :-) Now...gotta try to get the fat content down by adding apple sauce for part of the butter. I'll mail you some coconut milk powder if you want, but really I don't know that I was able to taste much of it in the final product.

BTW, Erin, I have my trick for getting nuts into baked goods at my house, where some of the kiddos don't like them. I just sprinkle them on top! That way, whoever doesn't like can remove them easily, and the rest of us can enjoy them. Bonus: the nuts get extra toasty.

Plus, have you made your modifications yet? I always like healthier versions.

Hey Leigh...bananas haven't lasted long enough in the house for another go at this. Better buy 2 bunches worth next shopping trip. Great tip on the nuts! Will let you know when I give this another (healthier) attempt.
